Ingredients:
100gms self raising flour
50gms Butter
1 Egg
50gms Castor Sugar
50gms Candied Fruits
20gms Graced Cherries
20gms Currants
50ml Milk
1tsp Baking Powder
Directions:
- Soak fruit and nuts at least overnight in fruit juice to soften.
- Chop the fruits and dredge with 1tablespoon of flour so they won’t sink in batter.
- Sift the flour and baking powder.
- In a bowl, cream butter and sugar together until light and fluffy.
- Beat in the eggs one at a time
- Gently fold in the sifted flour and add milk to make a soft dropping consistency
- Fold in the fruits.
- Pour the mixture into a greased and floured bread tin
- Bake in moderate hot oven till done.
- Use a sugar-syrup glaze to brush on cakes for a shine and to adhere.
