Ingredients:
2 cups noodles preferably whole wheat
2 cups broccoli florets chopped
2 cups mushrooms chopped
1 cup spring onions chopped
2 cloves garlic minced
½ cup tomato puree
½ cup fresh basil
½ teaspoon dried thyme
½ teaspoon dried oregano
½ teaspoon black pepper
¼ teaspoon red chili flakes
salt to taste
Directions:
- Boil water in a large pot and add noodles and salt to it. Allow it to boil and then drain it.
- Spray a skillet with nonstick cooking spray.
- Stir fry garlic, spring onion, fresh basil, mushrooms and broccoli.
- Add all the seasonings and tomatoes. Simmer until heated through.
- Pour vegetable mixture over boiled noodles.
- Serve hot.
