Ingredients:
4 capsicums
1 cup cottage cheese cubed
1 cup onion chopped
1 teaspoon cumin powder
4 tablespoon mint leaves chopped
1 tablespoon green coriander chopped
½ cup lemon juice
1 teaspoon olive oil
salt and red chili powder to taste
Directions:
- Cut out the top portion and Remove the seeds from the capsicums.
- In a bowl, add cottage cheese, onions, mint leaves, coriander leaves, cumin powder, lemon juice, salt, red chili powder and mix well.
- Add olive oil and mix well.
- Stuff the capsicums with the cottage cheese mixture.
- Cut aluminum foil into squares and cover the capsicum top with it.
- Bake in preheated oven at 200 degree C for 5 minutes.
- You can also barbecue it.
