Fruit Cake

Ingredients:

100gms self raising flour
50gms Butter
1 Egg
50gms Castor Sugar
50gms Candied Fruits
20gms Graced Cherries
20gms Currants
50ml Milk
1tsp Baking Powder

Directions:

  1. Soak fruit and nuts at least overnight in fruit juice to soften.
  2. Chop the fruits and dredge with 1tablespoon of flour so they won’t sink in batter.
  3. Sift the flour and baking powder.
  4. In a bowl, cream butter and sugar together until light and fluffy.
  5. Beat in the eggs one at a time
  6. Gently fold in the sifted flour and add milk to make a soft dropping consistency
  7. Fold in the fruits.
  8. Pour the mixture into a greased and floured bread tin
  9. Bake in moderate hot oven till done.
  10. Use a sugar-syrup glaze to brush on cakes for a shine and to adhere.
