Olives & Moong Sprouts Open Sandwich

Ingredients:

2 tbsp Olive Oil
2 cups red, Yellow and Green Capsicum sliced
1 tbsp Butter
1 cup Moong Sprouts
1 Foot Long Bread
2 tsp Lemon Juice
2 tsp Sugar
1/2 cup Olives sliced
2 Tomatoes sliced
1/2 cup Mozzarella Cheese grated
Salt and Black Pepper to taste
Pinch of Oregano Flakes to garnish

Directions:

  1. In the pan, heat olive oil and saute capsicum. Add salt and black pepper to it.
  2. In another pan, heat butter and saute Moong sprouts.
  3. In a small bowl, mix together olive oil, lemon juice, salt sugar and beat well with the whisker till the mixture emulsifies.
  4. Slice the foot long bread in half and brush the olive oil and lemon juice mixture on the top of the slices. Arrange tomatoes on top of it, followed by slices of capsicum and then Moong sprouts. Spread cheese over it. Top it up with black olives. Put it in the oven at 200 degree C and bake till the cheese melts. Garnish with oregano and some cheese.
  5. Serve hot.
