Stuffed Cottage Cheese Capsicum

Ingredients:

4 capsicums
1 cup cottage cheese cubed
1 cup onion chopped
1 teaspoon cumin powder
4 tablespoon mint leaves chopped
1 tablespoon green coriander chopped
½ cup lemon juice
1 teaspoon olive oil
salt and red chili powder to taste

Directions:

  1. Cut out the top portion and Remove the seeds from the capsicums.
  2. In a bowl, add cottage cheese, onions, mint leaves, coriander leaves, cumin powder, lemon juice, salt, red chili powder and mix well.
  3. Add olive oil and mix well.
  4. Stuff the capsicums with the cottage cheese mixture.
  5. Cut aluminum foil into squares and cover the capsicum top with it.
  6. Bake in preheated oven at 200 degree C for 5 minutes.
  7. You can also barbecue it.
